There is something deeply communal about a dish that is cooked and served in a single pan, meant to be shared, scooped, and savoured together. Shakshuka — that glorious simmer of tomatoes, peppers, spices, and perfectly poached eggs — is exactly that kind of dish. At GATHER, our Shakshuka (GATH-BRK-006) has become one of the most requested items on the breakfast menu, and it is not hard to understand why. It is bold, comforting, and unapologetically social — just like the best mornings should be.
A Dish With Roots Across Borders
Shakshuka’s origins are as rich and layered as the dish itself. While it is most commonly associated with North African and Middle Eastern cuisine, variations exist across the Mediterranean — from Libyan shakshouka to Turkish menemen to Mexican huevos rancheros. The common thread is the same: ripe tomatoes, aromatic spices, and eggs gently cracked into the simmering sauce. Our version pays homage to the Levantine tradition, using a carefully balanced spice blend that includes cumin, paprika, and a hint of harissa for warmth without overwhelming heat.
How We Make It at GATHER
Every pan of shakshuka at GATHER begins with the tomatoes. We use a combination of vine-ripened fresh tomatoes and high-quality San Marzano canned tomatoes to achieve the perfect balance of sweetness, acidity, and depth. The tomatoes are slowly reduced with olive oil, garlic, and diced bell peppers until the sauce thickens into a rich, jammy base. Then comes the spice — a proprietary blend that our kitchen team spent weeks perfecting during our opening menu development. The eggs are cracked directly into the bubbling sauce and cooked just until the whites are set but the yolks remain gloriously runny.
The dish arrives at the table in a cast-iron skillet, still sizzling, accompanied by warm khobz bread for dipping. There is no elegant way to eat shakshuka — you tear off a piece of bread, scoop up the sauce and egg together, and let the flavours wash over you. It is messy, it is interactive, and it is absolutely irresistible.
The best meals are the ones that make you lean in closer, reach across the table, and forget about everything else for a while.
Beyond Breakfast
While shakshuka is traditionally a breakfast or brunch dish, we have found that our guests order it at every hour of the day. We encourage you to pair it with our Moroccan Mint Tea (GATH-HBV-007) for a refreshing contrast, or with a Fresh Orange Juice (GATH-CBV-001) for a classic morning combination. However you enjoy it, know that every pan is made to order and every bite carries the spirit of shared tables and slow mornings.
