Karak chai’s story in the UAE begins with the South Asian diaspora, who brought their tea traditions from India and Pakistan and adapted them to local tastes. The original kadak chai — meaning “”strong tea”” in Hindi — was a robust brew made by boiling tea leaves directly in milk with sugar and spices. In the UAE, this evolved into the karak we know today: a richer, more aromatic version that often includes cardamom, saffron, and sometimes a hint of rose water.
Our Method, Your Cup
At GATHER, we use a premium CTC (Crush, Tear, Curl) black tea from Assam as our base. The tea is simmered in a blend of full-fat milk and evaporated milk, which gives our karak its characteristic richness and slight caramel sweetness. We add whole green cardamom pods, a few saffron threads, and a small piece of fresh ginger for warmth. The mixture is brought to a rolling boil three times — this triple-boil method extracts maximum flavour from the tea leaves and spices while allowing the milk to thicken slightly.
The final step is the pour. Our team pulls the karak from a height of at least thirty centimetres, creating a cascade of aerated, amber liquid that lands in the cup with a satisfying froth. We serve it in traditional small glasses, just as it would be served at the best chai cafeterias in the city.
